A hunk of beef raised on Scottish moorland has a very different ecological footprint from one created in an intensive feedlot using concentrated cereal feed, and a wild venison or rabbit casserole is arguably greener than a vegetable curry.
Scotland is one of my favourite places to perform: it's really something special. Scottish audiences are just so enthusiastic; their approach to dance music just feels similar to my own somehow.
My theory is that all of Scottish cuisine is based on a dare.
We don't really go in for big family dinners, but Scottish people are famously confrontational. It's a cultural thing, so maybe we don't need to have them to clear the air. Also, traditional family food isn't as nice here so there's no payoff for traveling hundreds of miles.
If taking one-self seriously as a woman means committing to a life of grooming, pumicing, pruning and polishing one's exterior for the benefit of onlookers, then I may as well leave my unwieldy rucksack to the top of a bleak Scottish hill and make my home there under a stone, where I'll fashion shoes out of mud and clothes out of leaves.
